Mixing and serving drinks. Included precisely because it is not a recognised occupation in Germany — and that single fact changes everything about how you get in, and whether you can get a visa for it.

A job, not a Beruf
Almost every file in this repo describes an anerkannter Ausbildungsberuf — a recognised occupation with a training ordinance, an examining chamber and a certificate. Bartending is not one. There is no Barkeeper Ausbildung, no chamber examination, and nothing for a foreign qualification to be assessed as equivalent to.
This is a sharper version of the point made in the restaurant service file: there, most people doing the job lack the qualification, but a matching one exists. Here it does not exist at all.
What people hold instead:
| Route | What it is |
|---|---|
| Fachmann/-frau für Restaurants und Veranstaltungsgastronomie | The nearest state qualification; drinks service is part of it |
| Hotelfachmann/-frau | Covers bar work among other departments |
| Fachkraft für Gastronomie | The 2-year qualification from the 2022 reform |
| IHK certificate courses / Deutsche Barkeeper-Union | Short industry certification — respected in the trade, not a state qualification |
| Nothing | The most common case |
The visa consequence — read this first
You cannot get a German skilled-worker visa as a bartender.
§18a AufenthG requires a recognised qualification, assessed as equivalent to a German one. With no German qualification in existence, there is nothing to assess. Years of excellent bar work abroad, and any number of international bartending certificates, do not open that door.
The realistic routes for non-EU citizens are therefore:
- Qualify in an occupation that does exist — the hospitality qualifications above — whether abroad and recognised, or here via §16a
- Westbalkanregelung (§26(2) BeschV), which permits any job regardless of qualification for nationals of six Western Balkan states, subject to quota
- Arrive on another basis entirely — EU citizenship, family, study, or the Chancenkarte
See visa routes. This is the clearest case in the repo of the rule that unregulated work still needs a qualification for the visa — taken to its limit, where no qualification exists.
What is actually regulated
The person is not; the premises and the alcohol are:
- Gaststättenerlaubnis — serving alcohol requires a licence for the business, and in most states an IHK Gaststättenunterrichtung for the operator. Gaststättenrecht became Länder law in 2006, so the requirements differ by Bundesland — another sixteen-system case, like Erzieher
- Jugendschutzgesetz — age limits on serving alcohol, and serving a minor is an offence committed by the person who serves
- §43 IfSG Infektionsschutz-Belehrung before first handling food
- Sperrzeit — closing hours, set at state and municipal level
- Smoking rules are state law too, which is why some Bundesländer still have smoking bars and others do not — and it matters for your lungs across a career
Pay
Market estimates, not tariff-verified. Regional DEHOGA agreements exist with patchy coverage:
| Stage | Gross/month |
|---|---|
| Unqualified bar staff | At or near the statutory minimum |
| Experienced bartender | €2,300 – €2,900 |
| Cocktail bar, skilled | €2,700 – €3,400 |
| Barchef / Bar manager | €3,200 – €4,200 |
| Hotel F&B, bar lead | €3,500 – €4,500 |
Two things lift real income well above the table. Tips are substantial in bar work and tax-free without limit under §3 Nr. 51 EStG. And night work attracts supplements — §6 ArbZG requires appropriate compensation for night hours, which in practice is a meaningful uplift. Compare net including both.
Conditions
Nights and weekends are the job. Expect noise exposure, late finishes with limited public transport, standing throughout, and in some states continued passive smoke exposure. Turnover is very high, and the trade is easy to enter and easy to leave — which is precisely why it rarely builds a career on its own.
Building a career from it
The people who do well move to where the structure is: bar management, F&B management in hotels, opening a bar (which needs the Gaststättenerlaubnis and business skills more than mixing skills), brand ambassador roles with spirits producers, or consultancy and bar openings. The Hotelfachwirt (IHK) is the usual formal step.
Pitfalls
- Assuming bar experience supports a visa. It does not. This is the single most important line in this file.
- Assuming a bartending school certificate is a qualification. In German terms it is not, however good the course.
- Unpaid trial shifts, common and generally unlawful where you do real work.
- Cash handling and till shortfalls — agree in writing how discrepancies are treated; deductions from wages are tightly limited by law.
- Serving minors is your offence, not only the venue’s.
