Fleischer/in — Metzger/in — Schlachter/in (Butcher)

Cuts, cures and processes meat. A Handwerk trade that has lost more of its businesses than any other in this repo — and whose industrial counterpart produced one of Germany’s worst labour scandals.

Official title Fleischer/in — regionally Metzger/in or Schlachter/in
Protected title Employment: no. Self-employment: yes — Handwerksordnung Anlage A
Category skilled-trades
Typical qualification Duale Ausbildung, 3 years, HWK exam
Regulated Meisterpflicht for self-employment
Last reviewed 2026-09

Three regional names

Stronger even than Tischler/Schreiner:

  • Fleischer/in — the federal Ausbildungsberuf title, and the everyday word in the north and east
  • Metzger/in — south and west: Bavaria, Baden-Württemberg, Hesse, Rhineland-Palatinate, Saarland
  • Schlachter/in — the far north: Schleswig-Holstein, Hamburg

One trade, one Ausbildung, one Meisterbrief. Search all three or you will miss most of the market.

Two very different sectors under one job title

Handwerk butchery Industrial meat processing
Work Cutting, curing, sausage-making, counter production, catering Line work in large slaughter and processing plants
Skill The qualified trade Often unskilled or semi-skilled
Employer Small Metzgereien, regional chains Large processors
Pay Modest but above minimum Historically at or near minimum

The industrial side has a documented history of exploitation — subcontracted Werkverträge, migrant labour from Romania, Bulgaria and Poland, dormitory accommodation, and the mass COVID outbreaks of 2020 that made the model politically untenable. The Arbeitsschutzkontrollgesetz (2021) responded by banning Werkvertrag arrangements and largely banning Leiharbeit in core meat-industry operations, requiring direct employment instead.

If a “Fleischer” vacancy is at a large processing plant, understand which of the two jobs you are being offered. This is the same two-tier trap as Fachkraft vs Maschinenbediener and Rettungssanitäter vs Notfallsanitäter.

What the job involves

Zerlegen (breaking down carcasses and primals), Wurstherstellung (sausage and cured-meat production), curing and smoking, preparing counter-ready products, and increasingly Partyservice and catering, which is where surviving Metzgereien make money.

Slaughtering itself has largely moved to specialist industrial facilities; most Handwerk butchers now buy in carcasses or primals.

Hygiene law is constant: §43 IfSG Infektionsschutz-Belehrung before first handling food, plus HACCP documentation and EU food-hygiene requirements.

Qualification route

  • 3 years dual, Betrieb plus Berufsschule, Handwerkskammer exam
  • Entry: formally open
  • Paid throughout: roughly €900–1,200/month gross
  • Ends with the Gesellenprüfung
  • Then: the Fleischermeister/Metzgermeister for business ownership, funded by Aufstiegs-BAföG

Counter sales is a separate occupation: Fachverkäufer/in im Lebensmittelhandwerk, Fachrichtung Fleischerei. Do not confuse the two on an application.

Pay

Handwerk levels — market estimates, not tariff-verified:

Stage Gross/month
Geselle, newly qualified €2,600 – €3,200
Geselle, experienced €3,100 – €3,800
Meister (employed) €3,900 – €4,900
Meister with own Metzgerei Highly variable; catering and quality niches are the profitable end

Demand — acute shortage inside a shrinking sector

Both things are true and they need stating together. The number of Handwerk butcheries has collapsed over decades — supermarket counters and industrial processing took the volume, and succession failures closed much of the rest.

At the same time almost nobody trains as a butcher any more, so qualified Gesellen and especially Meister are genuinely scarce and can choose their employer. The surviving trade — quality, regional, organic, catering — is short-staffed.

The honest reading: secure employment, poor sector growth, and ownership opportunities going begging because there is no one to take businesses over.

Foreign candidates

  1. To be employed: no recognition legally required.
  2. To be self-employed: Handwerksrolle entry — the Meisterbrief, an equivalence decision, §7b Altgesellenregelung, §8 Ausnahmebewilligung, or an employed Betriebsleiter. See meister.md.
  3. Equivalence sits with the Handwerkskammer.
  4. Language: B1–B2, more in a counter-facing role.
  5. Visa: skilled-worker route with recognition, or §16a to train here.

Pitfalls

  • Search Fleischer, Metzger and Schlachter.
  • Check whether a vacancy is Handwerk or industrial — same title, different job.
  • Religious slaughter and halal/kosher work is a specialised niche with its own certification and legal constraints in Germany; do not assume it is available.
  • Physical conditions: cold rooms, early starts, repetitive cutting injuries.
