Cakes, tortes, pralines, chocolate and desserts. The most creative of the food trades, with better hours than baking and a sector holding up rather better.
| Official title | Konditor/in |
| Protected title | Employment: no. Self-employment: yes — Handwerksordnung Anlage A |
| Category | skilled-trades |
| Typical qualification | Duale Ausbildung, 3 years, HWK exam |
| Regulated | Meisterpflicht for self-employment |

Konditor, Bäcker, Patissier — three different things
| Role | What it is |
|---|---|
| Konditor/in | Handwerk trade, own Ausbildung: cakes, tortes, pralines, chocolate, desserts |
| Bäcker/in | Handwerk trade: bread, rolls, Feingebäck. Overlapping but separate |
| Patissier | Not an Ausbildung at all — a kitchen role, reached through the Koch qualification and specialisation |
A hotel advertising for a “Patissier” usually wants a Koch who specialises in desserts; a Konditorei wants the Handwerk qualification. Both ads use both words.
What the job involves
Tortes and gateaux, fine pastries, praline and chocolate work (tempering, moulding, enrobing), ice cream and desserts, sugar and marzipan work, and increasingly decorated occasion cakes — weddings and celebrations are a large part of the modern business.
Work runs mostly in day shifts, starting early but not at 03:00 — a significant quality of life difference from baking, and worth weighing if you are choosing between the two.
§43 IfSG Infektionsschutz-Belehrung, HACCP and allergen labelling apply.
Qualification route
- 3 years dual, Betrieb plus Berufsschule, Handwerkskammer exam
- Entry: formally open; mittlerer Schulabschluss common
- Paid throughout: roughly €900–1,250/month gross
- Ends with the Gesellenprüfung
- Then: the Konditormeister, funded by Aufstiegs-BAföG. Competition work and chocolatier specialisation are genuine differentiators in this trade in a way they are not in most.
Counter sales is a separate occupation: Fachverkäufer/in im Lebensmittelhandwerk, Fachrichtung Konditorei.
Pay
Market estimates, not tariff-verified:
| Stage | Gross/month |
|---|---|
| Geselle, newly qualified | €2,400 – €3,100 |
| Geselle, experienced | €3,000 – €3,700 |
| Hotel or restaurant pastry section | €3,000 – €3,900 |
| Meister (employed) | €3,600 – €4,600 |
| Meister with own Konditorei | Highly variable; premium and occasion work is the profitable end |
Fewer night and Sunday supplements than baking, so the base is closer to the take-home.
Demand and outlook
Better than the other two food trades. The sector is small and has consolidated, but premium and occasion demand has held up: celebration cakes, chocolate, patisserie in hotels and cafés, and a visible artisan market that industrial production does not serve well.
Training numbers are still low and qualified Konditoren are scarce, so bargaining power is reasonable. As with Werkzeugbau and joinery, the durable work is what cannot be mass-produced.
Foreign candidates
- To be employed: no recognition legally required.
- To be self-employed: Handwerksrolle entry — Meisterbrief, equivalence decision, §7b Altgesellenregelung, §8 Ausnahmebewilligung, or an employed Betriebsleiter. See meister.md.
- Equivalence sits with the Handwerkskammer.
- Language: B1–B2. Production work is manageable at B1; B2 for customer orders, consultations on occasion cakes, and the Meister route.
- Visa: skilled-worker route with recognition, or §16a to train here.
- Portable skill. Patisserie training transfers internationally better than most trades here, and German Konditorei has standing abroad.
Pitfalls
- Konditor is not Patissier, and a hotel job is not a Konditorei job — different qualification routes, different employers.
- Seasonality: Christmas, Easter and the wedding season are intense; expect the hours to concentrate.
- Small businesses dominate, which means pay and conditions vary enormously between employers with no tariff to anchor them.
- Employment needs no recognition; self-employment does.
