Hauswirtschafter/in (Home Economics / Institutional Housekeeping)

Formally one of the Grüne Berufe, and almost nobody who holds it works on a farm. In practice it is the qualified profession behind catering, hygiene and daily living in care homes, schools, Kitas and institutions — which puts it directly above the unqualified cleaning tiers, and makes it the most useful upward route out of them.

Official title Hauswirtschafter/in
Protected title No
Category green (Grüne Berufe) — by classification, not by workplace
Typical qualification Duale Ausbildung, 3 years
Examining body Landwirtschaftskammer, or a state authority
Regulated No — but food hygiene law governs a large part of the work
Last reviewed 2026-09

Why it is classified as a green profession

Historically the occupation was the farm household: feeding, provisioning and running a rural holding alongside the Landwirt. The classification and the examining body stayed where they were; the employment moved.

This matters administratively. The competent body for a foreign qualification is the Landwirtschaftskammer or a state authority — not the IHK, and not the body that oversees the care home you will actually work in. It is the same trap the whole green sector sets.

What the job actually involves

Area Work
Verpflegung Planning and preparing meals for groups, to nutritional standards, within a budget, for people with allergies, diabetes, dysphagia-modified diets and religious requirements
Hygiene HACCP documentation, cleaning and disinfection plans, temperature records. The §43 IfSG food briefing is mandatory before you start
Textilpflege Institutional laundry, including infection-control handling
Reinigung Cleaning and its organisation — overlapping with the Gebäudereiniger trade, but as part of running a household rather than as a contracted service
Hauswirtschaftliche Versorgung in care In a care home this is a funded part of the care package, not an overhead — which is why the role is secure
Organisation Purchasing, stock, budgets, rosters, and supervising unqualified staff

In care and Eingliederungshilfe settings there is also a relational element that the job title hides: cooking and eating together is daily structure for residents, and the Hauswirtschaft staff are often the people with the most ordinary, least clinical contact with them.

Confusable roles

Title Reality
Reinigungskraft No qualification. Cleaning only
Betreuungskraft (§43b SGB XI) A short course, around 160 hours, for everyday support and activities in care homes. Widely used as an entry job. Not a vocational qualification and supports no visa
Küchenhilfe Unqualified kitchen assistance
Koch/Köchin A different three-year trade, IHK-examined, focused on cooking as a craft rather than on running a household
Ökotrophologe/in A degree in nutrition and home economics — the academic route above this

Pay

Market estimate, except the public-sector row.

Setting Gross/month
Private provider, qualified €2,500 – €3,100
Public employer — care home, school, Kita (TVöD EG 4–6) €2,994 – €3,926
With responsibility for a kitchen or a department €3,300 – €4,000
Hauswirtschaftsmeister/in, Betriebsleitung €3,800 – €4,800
Church providers (Caritas, Diakonie, AVR) Comparable to TVöD

TVöD row is the scale verified for this repo, valid 01.05.2026 – 31.03.2027.

The tariff gap is the point. The same work pays materially more at a municipal, church-affiliated or public employer than at a private contractor, and in this occupation the public and church providers are the majority of the sector — care homes, schools, Kitas and hospitals. That makes the better-paid employer the normal one, which is unusual in this part of the pay table.

Demand and outlook

Strong, and with a dated driver.

  • Care homes need Hauswirtschaft staff as a funded part of their service, and the number of residents is rising with demographics.
  • School catering is expanding sharply because of the statutory entitlement to all-day primary schooling, which is being phased in from the 2026/27 school year. Every school that adds a lunch service needs people who can run one to hygiene and nutrition standards.
  • Kitas likewise.
  • Qualified staff are scarce, because the occupation is invisible: people do the work unqualified for years without knowing the qualification exists.

The route up from unqualified work

This is the most practically useful thing in this file, and it is why it cross-references the services folder.

Someone working as a Küchenhilfe, Reinigungskraft or Betreuungskraft in a care home is already doing parts of this job. The routes to the qualification:

  • Umschulung — a funded retraining, typically two years, via a Bildungsgutschein
  • Externenprüfung — sitting the examination directly on the basis of documented work experience, typically requiring around one and a half times the Ausbildung’s length in relevant employment. For people who have done this work for years, it is the shortest route to being paid for it properly
  • Teilqualifizierungen — modular partial qualifications that stack

The pay difference between unqualified and qualified in the same building is several hundred euro a month, plus access to the TVöD groups.

Foreign candidates

  1. To work: no recognition required.
  2. For the visa: yes — and the competent body is the Landwirtschaftskammer or a state authority, which is counter-intuitive for a job in a care home. Check before filing.
  3. §43 IfSG food-handling briefing is required before you start, is obtained at the Gesundheitsamt, and is German.
  4. Language: B1–B2. Allergen and diet information, hygiene documentation, and — in care — residents.
  5. Visa: §18a, §16a, or §26(2) BeschV.
  6. A foreign catering or home-economics qualification is frequently found partly equivalent, with German food-hygiene law as the gap. An Anpassungsqualifizierung closes it.

Pitfalls

  • The classification misleads. Green profession, institutional workplace, agricultural chamber.
  • Betreuungskraft is not this qualification, though the roles sit side by side in care homes.
  • Ask which employer type you are joining. Public, church and private pay differently for identical work here, and the difference is large.
  • Hygiene documentation is legally serious. HACCP records are inspected, and in a care home an outbreak is a safeguarding matter.
  • If you already do this work unqualified, sit the Externenprüfung. It is the single highest-return step available in this part of the labour market.
